    When I was a kid, it was a family tradition to have pancakes either Saturday or Sunday morning. My dad would always whip them up with the Aunt Jemima mix and put the Aunt Jemima syrup on the table.

    I still love pancakes every once in a while; if you know me, I’m a kid at heart. So here’s a recipe for Cinnamon Protein Pancakes:

    INGREDIENTS:
    -2 scoops Vanilla Formula 1
    -1-2 scoops Vanilla PDM
    -1 egg or 1/4 cup egg whites
    -1/4 cup coconut or almond flour
    -1/4 teaspoon baking powder
    -1/4 to 1/2 teaspoon of cinnamon
    -1 apple
    – water

    So to start, add your 2 scoops of vanilla formula one, 1-2 scoops of vanilla PDM, 1/4 cup coconut or almond flower, 1/4 to 1/2 teaspoon of cinnamon and 1/4 teaspoon of baking powder; whisk together and add your 1 egg or 1/4 cup egg whites and water to make it thin enough to cook evenly.

    To make the “syrup”: cut up one apple into slices and blend with water and a little bit (1/4 teaspoon) of cinnamon and water to your desired thickness.

    Cook one pancake at a time, about 4-5 inches in diameter.

    You will have extra “syrup” but otherwise this recipe is for pancakes for one person, just multiply for more or make extra and freeze them as a grab and go snack or breakfast!
