• Guacamole Boiled Eggs

    As someone who loves having guests over, I’m constantly trying to find healthy alternatives to my favourite finger food to share with my friends! I’ve always loved deviled eggs, but today I will show you how to make a much healthier version, using guacamole as the filler! Instead of using the egg yolk and tons of mayo, I use avocado, tomato, onion and some seasoning! Hard boiled eggs provide a great source of protein while the avocado offers plenty of healthy unsaturated fat. These snacks are easy to make, they taste great, and you can get creative with the way you make your guacamole.

    Ingredients and Boiled Eggs

    INGREDIENTS

    • 6 hard boiled eggs
    • 2 ripe avocado
    • 1 small tomato
    • ¼ red onion
    • ¼ of a lime
    • ½ clove fresh garlic (or more as you please!)
    • Chilli pepper flakes
    • Salt and pepper

    DIRECTIONS
    For the eggs

    • Hard-boil 6 eggs
    • Carefully remove eggs from their shells
    • Cut the cooled eggs in half, lengthwise
    • Using a small spoon, remove the egg yolks and discard
    • Place empty egg halves on a platter

    For the guacamole

    • Cut both avocado lengthwise, remove the pits and keep them to the side
    • Run a knife lengthwise and widthwise to make a grid in the avocado, run your knife around the edge of the skin to remove the pieces into a large bowl
    • Dice the tomato and onion into very small pieces and add to bowl
    • Mince the garlic and add to bowl
    • Add salt, pepper and chilli flakes to the mix
    • Squeeze the lime all over the mix
    • Mash the guacamole and stir until you reach the desired consistency
    • Spoon the guacamole into the egg halves and enjoy!

    NOTES:

    • Many recipes call for cilantro in your guacamole (I personally don’t like the taste)
    • It’s best to keep the egg halves and guacamole separate, and chilled until you’re ready to serve
    • Keep the pit of the avocado in the guacamole until serving, it helps to keep from turning brown

    These guacamole eggs are incredibly fast and easy to make, and I guarantee they’ll be a hit with any crowd! They are light and easy to eat so you can enjoy them outside on a hot day! You can even hard-boil the eggs ahead of time, to cut down on prep time the day of!
